Fried Rice Menudo


                           
                             Fried Rice Menudo
Breakfast (literally meaning "breaking the fast" of the night) is the first meal taken after rising from a night's sleep, most often eaten in the early morning before undertaking the day's work.
Nutritional experts have referred to breakfast as the most important meal of the day, citing studies that find that people who skip breakfast are disproportionately likely to have problems with concentration, metabolism, and weight.
GOOD MORNING!

Ingredients:

6 cups Leftover Rice
MENUDO RECIPE

Ingredients:

2 lbs pork belly (about 1 kilo)
1/2 lb pork liver (about ¼ kilo)
1 cup carrots, diced
1 cup potatoes, diced
1 cup red bell pepper, chopped
2 cups tomato sauce
1 cup water
1/4 cup cooking oil
salt and pepper

Cooking Procedure:

1.Heat pan and place cooking oil
3.Fry potatoes and carrots for about 5 minutes and set aside
5.Add the pork belly and water then simmer for 45 minutes
6.Add the pork liver and tomato sauce and simmer for 10 minutes
7.Add the fried carrots and potatoes, red bell pepper then simmer for another 5 minutes
8.Add salt and pepper to taste.

FRIED RICE PROCEDURE:

Sautee garlic in 1tsp olive oil, put the left over rice and scoop the menudo (amount is depends on your desire) mix it well. Serve hot and share...
